We are Fred and Willa of Scaggs Meat Rabbits. We have been raising meat rabbits for about 17 years. We moved to Dixie County with our two boys from Pinellas County over 20 years ago. Our family has always been interested in farming. Our oldest son was very active in FFA while in high school. He raised and showed pet Rex rabbits. He won all kinds of ribbons and trophies. So we started raising the New Zealand meat rabbits as a hobby, but that quickly got out of hand. Now we have cages for about 250 Does and 40 Bucks. Rabbit meat is very nutritional. High in protein, low in both sodium and cholesterol and a good source of iron. It is an excellent source of B12. Domestically produced rabbit meat contains less fat than other meats. They are leaner than beef, chicken or pork. Eating rabbit is a healthy meat choice with a tasty flavor. It is a milder, more delicate flavor than most people think. Rabbit can be cooked any way you would cook beef, pork, chicken, turkey, or lamb. It makes excellent sausage and jerky. We raise our own rabbits and process them ourselves.
